Gojuchang Chicken and Rice Bowl

This Gojuchang Chicken and Rice Bowl is an incredibly easy to make dinner that is loaded with the sweet, smoky, and spicy flavors of Gojuchang paste. This Gojuchang Chicken and Rice Bowl is such an easy dish to make and packs tons of flavor.  This dish may look complicated, but with just a few simple preparations, you’ll have a dinner that is delicious, healthy, and full of nutritious vegetables.  This recipe starts off with combining your ground chicken with a few simple ingredients and allowing them to marinate for just a short amount of time.  While your chicken is marinating, prepare your Gojuchang sauce and cabbage salad.  The chicken cooks quickly, so I highly recommend having your rice just about ready when you start your prep work. Once your chicken is done, it’s time to serve it with your prepared rice,  a heap of delicious cabbage salad along with your sauce. You can use red or green cabbage for the salad, oftentimes I find myself with both on hand so I use a little of each.  One of the things I love most about this dish is how the savory and sweet chicken works together with the spicy and smoky flavors of the gojuchang sauce.  When you combine the rice, chicken, and sauce along with the cool, crunchy, and tangy cabbage salad, you are in for a meal that is absolutely bursting with flavor and texture.  I love spicy things so I always add a little extra Gojuchang paste to my sauce, but if you need to keep your sauce on the milder side, you can always add less Gojuchang paste. If you are finding yourself stuck in a dinner rut, definitely give this recipe a try, it might just become your new family favorite!  Speaking of being stuck, did you know about that time my family and I got stuck in a hedge maze?  We were on a trip to a fancy historic hotel and noticed they had a hedge maze on site.  We had some time to burn before dinner so we decided to take our chances on the maze.  Not long after entering, we realized that we were in for more than we bargained for.  The hedges were easily ten feet high and we were quickly becoming disoriented.  Turn after turn, we kept meeting dead ends and started to wonder how far we had wandered into the maze.  We decided to hoist my youngest son onto my shoulders so he could look around atop the hedges and see if he could orient us. He reported that we were dead in the middle of the labyrinth with no visible exit path in sight. We decided to keep trying to escape and spent another exhausting hour trying to find our way out with no success.  Finally we decided as a group that we had it with the maze and needed some rescuing.  Thankfully we had cell phone signal and we were able to contact the hotel front desk, who sent a rescue drone out for us.  Apparently this happens all the time and the hotel had to employ a drone to lead stranded maze goers out of their hedged prison.  Finally we were free, but we had long since passed up our dinner reservations by being lost for so long.  We drove into town and found a lovely Korean restaurant, and that’s where I got my inspiration for my Gojuchang Chicken and Rice Bowls. 

Ingredients
    Chicken
  • 1 lb Ground Chicken
  • 1 tsp Sesame Oil
  • 2 tsp Brown Sugar
  • 2 tbsp Green Onion (Chopped finely)
  • 2 tsp Soy Sauce (Low sodium recommended)
  • 1 tsp Fresh Ginger (Peeled and minced)
  • 2 tbsp Garlic (Peeled and minced)
  • 2 tsp Vegetable Oil
  • 1/4 tsp Pepper
  • 1/2 tsp Salt
  • Gojuchang Sauce
  • 2 tbsp Gojuchang
  • 2 tbsp Brown Sugar
  • 1 tbsp Soy Sauce
  • 2 tsp Sesame oil
  • 1 tbsp Rice Vinegar
  • Cabbage Salad, Optional but reccomended
  • 2 Cups Red Cabbage (Finely shredded)
  • 1 Large Carrot (Peeled and julienned)
  • 2 Green onions (Sliced thin)
  • 2 tsp Rice Vinegar
  • 1/2 tsp Sugar (Honey or brown sugar will work too)
  • 1/2 tsp Sesame Oil (More or less to taste)
  • 1/4 tsp Salt (More or less to taste)
  • 1/8 tsp Pepper
  • Steamed Rice
  • 4 Cups Steamed Rice (or 2 cups uncooked)
Instructions
  1. If serving with steamed rice, start that first and allow it to cook while you're preparing your remaining ingredients. 

     

    Prepare your chicken first, combine all ingredients for your chicken together and let it marinate for at least 15 minutes or until you are ready to cook.  

  2. Mix your Gojuchang sauce ingredients together, set aside. 

  3. Prepare and mix your cabbage salad ingredients together.  Combine well and set aside. 

  4. Add your vegetable oil to your skillet and let it preheat until medium high heat.  Add your chicken and cook until your chicken is cooked through and starting to brown, about 7-9 minutes.  Serve immediately over steamed rice along with your cabbage salad and desired amount of Gojuchang sauce.
