Cilantro Lime Rice

This Cilantro Lime Rice is the perfect side for your next taco night and even better as a base for a homemade burrito bowl. Use my Foolproof Chicken Tacos with my Red Cabbage Slaw for a flavor packed topping. This is truly one of my family's favorite side dishes because it takes basic ingredients and brings them to another level.

This Cilantro Lime Rice is the perfect base for your next homemade burrito bowl.  It’s light and fluffy and full of delicious cilantro and fresh lime juice.  This rice is perfect as a base for a burrito bowl but can also stand alone as a side for your next taco night.  Pair it with my Foolproof Chicken Tacos, Red Cabbage Slaw, or some Guacamole and you are in for a real treat!  You can cook your rice in any way that suits you, however I prefer the convenience of a rice cooker.  There’s nothing better than popping your rice into the rice cooker,  and then you can set it and continue to prep without worrying about your rice boiling over or getting mushy.  Whenever it’s burrito bowl night or taco night,  the rice cooker doing half the work for me is like having a helper in the kitchen!  I love when I can use fresh cilantro from my garden for my cilantro lime rice, it just makes it that much more delicious than store bought herbs. Speaking of my garden, did you know about that time a rabid squirrel had taken over my garden?  Every year I grow all my herbs and vegetables lovingly from seed and it was time to transfer the fruits of my labor out into my garden.  After busting a major sweat, I had all my plants beautifully lined up and watered.  Later that week, I decided I would use some of my freshly planted cilantro to make a lovely batch of Cilantro Lime Rice.  I had all my ingredients prepared except the cilantro, that’s when I ventured out to my garden only to be met with the angriest squirrel I’ve ever seen!  Now I know squirrels can be silly or even aggressive, but this one was staring back at me with glowing red eyes and foam coming out of its mouth and it was making the most awful noises.  There was no way I was coming any closer so I conceded to head to the grocery store for some store bought cilantro.  As we were all sitting down to our delicious dinner, my husband pointed out some hot peppers that were bitten into out near the garden.  It turned out that I didn’t have a rabid squirrel, but just one who had eaten some spicy peppers and had desperately needed a drink of water.  Feeling sorry for the squirrel, my son had put out some ice water for it and we continued our meal of burrito bowls made with my delicious cilantro lime rice. 

Ingredients
  • 1 1/2 Cups Rice (Uncooked)
  • 1/2 Cup Lime Juice (Freshly Squeezed)
  • 3/4 Cup Cilantro (Chopped)
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
Instructions
  1. Start by making your rice.  Rinse 1 1/2 cups of uncooked rice and cook according to package instructions.  I prefer a steamer because it's more consistent and hands off method.  While your rice is cooking, prepare your lime and cilantro.  

  2. Once your rice is finished cooking, combine remaining ingredients into your rice and mix well.  Adjust for any additional salt or lime and enjoy!
