Broccoli Cheddar Stuffed Chicken

I love a good broccoli and cheddar recipe, and this one is defintiely at the top of my list. My Broccoli and Cheddar stuffed Chicken Breast marries the classic flavors of broccoli and cheddar with juicy and savory chicken breast for a delicious meal. I like to serve this along with a starch like roasted potatoes and of course more veggies (because we can't have enough veggies, right?). I make this recipe only using two chicken breasts to serve to my family because once these are stuffed, two chicken breasts really do go a long way, but if you have a larger family I would definitely recommend doubling this recipe.   • 2 Chicken Breasts (Boneless, skinless)
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Paprika
  • 1/2 tsp Dried Thyme
  • 3 tsp Olive Oil
  • Broccoli Cheddar Stuffing
  • 1 Cup Broccoli Florettes (Cut very small)
  • 1 Cup Cheddar Cheese (Shredded)
  • 2 tbsp Mayo
  • 1 tsp Paprika
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
Instructions
  1. Preheat your oven to 400 degrees and start by preparing your stuffing ingredients.  Cut your broccoli into small pieces, about 1/2 inch or so.  

  2. Add your broccoli to a microwave safe dish and add about 1 Tablespoon of water and microwave for 2 minutes.  Allow your broccoli to cool and combine your stuffing ingredients together.  

  3. Lay your chicken flat on your cutting surface and cut a generous pocket into your chicken breast.  Make your pocket as large as you are able to without cutting through the chicken breast.  Place your stuffing inside of your chicken breast and season on both sides with your chicken seasoning mixture.   Once your chicken is stuffed and seasoned, tie your chicken shut with butchers twine.  

    If you don't have butchers twine on hand, toothpicks work great, just don't forget to take them out!!!!
  4. Preheat a saute pan to medium high heat and add about 2 teaspoons of olive oil.  Sear your chicken about 3-5 minutes per side and place in your 400 degree oven for 25 minutes or until the internal temperature reaches 165 degrees.  Allow to rest about 5 minutes and enjoy!
