This Asian Cabbage Salad is loaded with so many different textures and flavors from cool crunchy cabbage to a savory and creamy peanut dressing. This salad is perfect on it’s own, but can also be paired with just about any protein to make it a complete meal. Drizzle on some sriracha or chili oil if you like it spicy and enjoy!!

Do you ever wonder what to do with that entire head of cabbage you have sitting in your refrigerator? I’ll give you an idea, chop it up and make this Asian Cabbage Salad!  For this recipe, about 6 cups of cabbage is sliced into ribbons for the main salad base.  I love just about any cabbage for this recipe whether it’s Savoy, Napa, or a standard green cabbage, you really can’t go wrong. For even more flavor, I’ve added generous amounts of carrots, green onions, cilantro, and edamame.  This salad alone is loaded with so many fresh and delicious textures and flavor, but it’s about to get better.  This salad is topped off with a savory Asian peanut butter style dressing that brings it all together.  One of my favorite ways I like to make any dressing is to add all of my ingredients into a jar and then shake them up.  If you’ve ever made any dressing with peanut butter, you know how frustrating it can be to get it mixed together without half of your liquid ingredients spilling over the side of the bowl, shaking everything in a jar is truly the best way to go.   Don’t forget to grab some crunchy asian noodles for the topping, this salad has plenty of wonderful textures, but that extra crunch from the crispy noodles is one of the best parts. This is a great recipe to make ahead of time, you have so many hearty vegetables in this recipe, they’ll easily keep in the fridge for a day.  One way to make this an even more complete meal is to add your favorite protein to the salad.  Anything from a rotisserie chicken to cocktail shrimp will be a great (and pre made) addition.  Make this salad for your next lunch or busy weeknight dinner and you’ll be crashing into flavortown.  Speaking of crashing, did you know about that time I got into a nasty fender bender with a van full of Elvis impersonators?  I was on a girls weekend in Vegas and we decided to hail a taxi to get to the wax museum.  On our way there, we were able to see all the different sights from the car and were having a wonderful time. Out of nowhere, we heard the long and desperate screech of tires and then we all were thrown from our seats!  At first we were all horribly confused, but when we got our wits about us, we looked out the window to see about 7 Elvis impersonators arguing with our driver about who’s fault the crash was.  The scene was really quite spectacular, we had our old salt of a driver versus multiple Elvis’s who all miraculously stayed in character!  We heard one Elvis yelling “Don’t be Cruel” while another one was exclaiming the incident got him “All Shook Up”. After a while, everyone cooled their jets, exchanged insurance information, and went on our merry ways.  After the wax museum, it was time for lunch where we hit up a little cafe who had an amazing salad menu, and that’s when I got my inspiration for my Asian Cabbage Salad.

Instructions

  1. Prepare all of your veggies for the salad, rinse and chop your cabbage, onion, and cilantro.  Peel and julienne your carrots or you can buy pre cut carrots at the grocery store.  

  1. Add your prepared veggies together in a large bowl.  You can add your crunchy noodles on top at this point or keep to the side. 

    If I'm making this salad ahead of time, I wont add the crunchy noodles until its time to serve so they don't get soggy.
  1. Once your salad is ready, prepare your dressing by combining all of your dressing ingredients together well. 

    I love to put all of my ingredients into a jar and shake it up. I find that mixing peanut butter with liquidy ingredients can be a frustrating experience!
  1. Dress your salad and enjoy!
