Olive oil, lemon, garlic, and oregano are common kitchen staples, but when you combine them and allow them to marinate with the chicken, that’s when the magic happens. The olive oil and lemon tenderizes the chicken while the garlic and herbs provide a rich flavor. This is a recipe that my mother in law, who is from Greece, had taught me years ago when I first started dating my husband. I was astonished when I first tasted these kebabs, and ever since then, it has become a regular staple in my household. It’s healthy, incredibly flavorful and easier to make than you might realize. So shout out your best “Opa!!” and get ready for the best garlic breath you’ll have in a while. Speaking of magical things, I had the strangest thing happen to me the last time I had made these kebabs for dinner. My chicken had been marinating for a few hours, and I was just about to get my grill started when the sky changed from a bright sunny afternoon to a dark and ominous mood. That’s when I heard a sharp and commanding knock at my front door. I was startled and took hesitant steps to see who was there. I was immediately disarmed when I saw it was an innocent young child looking to sell something. With relief, I answered the door, but I was not relieved for long. She immediately presented me with a box of candy that she was selling for her Society of Supervillains. And this wasn’t regular candy either! It was like the “would you rather” of bad candy choices. Not wanting to upset someone who would likely want to take revenge if I turned them down, I began to scan my choices to see if I could select a palatable option. I finally narrowed it down to a candy so sour that you would not be able to taste for 2 hours or the candy bar that gives you the hiccups. I reluctantly made my choice on the candy bar, forked over some cash and returned to making my dinner. No way was I going to choose the sour candy and miss out on enjoying the flavors of my Kebabs!

Whisk your marinade ingredients together and combine well with your cubed chicken. Set your chicken aside in the refrigerator and allow to sit for at least 30 minutes, but 2 hours is best.
This is an easy dish to prep ahead of time. When you are ready to get the chicken marinated, simply pour the marinade over and set your timer.
Time to grill

Once your chicken has marinated, thread it onto bamboo skewers and allow it to come to room temperature for about 15-20 minutes.

Preheat your grill to medium high heat. Once you have prepared your grill, place your kebabs and the grates and grill for approximately 12-15 minutes turning every 4 minutes until the internal temperature reaches 165 degrees. Serve with some Tzatziki Sauce and enjoy!
Your kebabs may take longer or shorter to cook depending on how large your chicken is. When in doubt, check the internal temperature by using an instant read thermometer.
