If you’re in the mood for something bright, crisp, and packed full of delicious and healthy flavors, try this Lemon Ginger Cabbage Salad. This salad is based entirely around the bold flavors of lemon zest and ginger to create a dressing that is incredibly refreshing and light in flavor. I love to serve this salad along with any grilled meat, or even all by itself for a colorul veggie salad. One of my favorite times of year to make this salad is during apple season. I know you can get apples throughout the year, but in North Carolina, we get the most delicious and crispy apples in early fall that are absolutely perfect for using in this salad. This Lemon Ginger Cabbage Salad also uses an rainbow of vegetables so you know you are eating something incredbily good for you. Enjoy!

This Lemon Ginger Cabbage Salad is the perfect recipe if you are looking for a bright, crisp, and delicious salad that is bursting with bold flavors. Red cabbage is the main ingredient of this salad along with crispy carrots, juicy apples, and savory green onions.  For the apples, I like to choose a variety that is crisp and tart in flavor.  Here in North Carolina, we have the most amazing selection of apples in early fall like Gold Rush or Mutsu Apples, however if you are grabbing an apple from the grocery store, a Granny Smith or HoneyCrisp apple will work great in this recipe. Another ingredient I like to use to its full potential is the lemon.  By using the zest along with the juice, you get a whole spectrum of lemon flavors that really make this salad shine.  Ginger is another one of my all time favorite ingredients, I love to mince my ginger as small as I can to get a little bit of ginger in every bite.  Not only is this salad delicious, you also get an assortment of colorful and nutrient rich veggies along with the anti-inflammatory properties of the ginger and lemon. This salad is great to serve immediately, but because red cabbage is so hearty, this salad will also be good for the following day.  This salad really is great any time of year because it doesn’t require any ingredients that are specific to any season so you won’t find yourself with any unexpected surprises.  Speaking of unexpected surprises, did you know about that time a squirrel got into our tent on a camping trip? My family and I took a trip to the mountains for a weekend of camping and hiking.  Once we had gotten our camp site set up, we were pretty tired so immediately after finishing our dinner, we all retired for the evening and went to bed.  The next morning, I woke up to a strange feeling that something was watching me.  When I opened my eyes, I found myself face to face with a mischievous little squirrel.  I immediately woke my kids and husband to help me get the rogue squirrel out of our tent, and that’s when the havoc began.  The squirrel must have been just as alarmed as we were because it began to race all around our tent jumping from cot to cot and even used one of my kids' heads as a jumping off point.  After a few minutes of this frenzy, we were able to open every door and window to escort our furry friend back outside.  After that little mishap we all needed some time to decompress with a nice hike followed by a delicious lunch of a Lemon Ginger Cabbage Salad.

  1. Gather all of your ingredients and start by making your dressing.  Combine all of your dressing ingredients together thoroughly and set aside. 

  1. Prepare your remaining salad ingredients according to recipe directions. 

  1. Combine your prepared vegetables along with your dressing and combine well.  Serve immediately.  Enjoy!

Note

For the Apples, I highly recommend a crisp and tart variety that will complement the lemon and ginger and stand apart texturally from the carrot and cabbage.

The ginger is a suggested amount, when I make this I usually double it because I'm a ginger lover.
