Description

When it’s late summer and you want something that hints of a savory fall cuisine, look no further than my Rosemary Steak Kebabs.  These are so simple to make and bring loads of bold flavors that will impress your family for a weeknight dinner.  The overall prep time is about 5-7 minutes, and then the marinade will do the rest of the work for you until it’s time to grill.  I’m always looking for ways to incorporate veggies into my food, so I’ve added a generous amount of mushrooms and onions to go with these kebabs, but if either of these vegetables aren’t for you, you can simply omit them and you will still have an amazing meal.  These kebabs aren’t complete without the horseradish dipping sauce.  I personally love horseradish and all things spicy, so I usually add way more than the recipe suggests, however if you like it more mild, add a small amount of horseradish at a time until you’ve reached your desired horsey-ness.  To me nothing is more complementary than tender juicy steak marinated with the flavors of rosemary and garlic dipped into a horseradish cream sauce.  For your cut of steak, you can use whatever steak suits you whether it’s sirloin or filet, if you want to take it up a notch.  Whatever steak you choose for these kebabs, the flavors will speak for themselves leaving you wishing you had more.   Speaking of wishing, have you ever heard of a monkey's paw?  Well I didn’t until my recent trip to Zanzibar when a mysterious man emerged from the shadows with his cart full of wares, and right on top of his cart was a monkey’s paw.  At first, I’ll admit that the thought of purchasing a disembodied hand was a little off putting, but then I imagined all the possibilities this could offer.  After the gentleman spoke his words of extreme caution, I thought very carefully on what my first of 3 wishes would be.  Naturally, I wanted to use the monkey’s paw for the greater good, but I had to be sure it worked so I kept my first wish real simple, I wished for a coke.  Out of nowhere a refreshing bottle of soda was in my hands!  Ok, now that I knew it worked, I was going to sit down with my beverage and think long and hard about whether I should ask for world peace, solve world hunger, or stop global warming. I mean the possibilities were endless, and I wouldn’t take any credit for it either, I just wanted to make the world a better place.  Finally, I had decided on which global cure I would ask for, but when I went to reach for my monkey’s paw, it was gone and in its place was a monster truck and all the lego sets in the world.  It turns out that while I was deep in thought, my kids had gotten a hold of the paw and made their wishes come true.  While I was sincerely bummed out that I had lost an opportunity to help millions, I was also glad that my kid had not asked for a killer robot or anything.  After that whole experience, we went to a local cafe where I had the most delicious kebab lunch and gained my inspiration for my Rosemary Garlic Kebabs, I guess wishes do come true.

Ingredients

Steak Kebabs

Horseradish Sour Cream

Instructions

  1. Gather and prepare all of your ingredients.  Cube your steak to about 1-2 inches, depending on the size of your steak.

  1. Prepare your marinade, finely mince your rosemary and garlic, combine with your olive oil, worchestershire sauce, salt, and pepper.

  1. Combine your steak, mushrooms, onions, and marinade together.  Allow your kebabs to marinate for at least 60 minutes or up to 3 hours.

We're not all mushroom lovers, if mushrooms or onions aren't your jam, simply omit them and the kebabs willl still be delicious!
  1. While your kebabs are marinating, combine your horseradish dipping sauce ingredients together, cover and refrigerate until ready to use.

  1. Once your kebabs are done marinating, thread on to bamboo skewers and preheat your grill to medium high heat.

  1. Once your grill is preheated and your grates are cleaned off, grill your kebabs for 12-15 minutes, flipping every 4-5 minutes or the internal temperature reaches 145 degrees.  Serve with your horseradish dipping sauce and enjoy!
