One of my favorite ways to eat dinner is in the form of a dinner bowl. I absolutely love how you can just load up all your favorite flavors and enjoy them one forkful at a time. My Chicken Fajita Bowl is another great ambassador for all the dinner bowls out there. I started with a simple seasoning mixture for the chicken and top it with some colorful peppers, guacamole, jalapenos, and just about anything else you want. I also love this recipe because of how creative you can get with toppings. No veggies on hand? Grab some beans from the pantry. Or if you’re like me and end up with all sorts of odds and ends in your vegetable crisper at the end of the week, this is a great way to use them as well. I am a lover of all meals in a bowl, and nothing is better than piling all of your ingredients together and enjoying all the different textures and flavors together.  My Chicken Fajita Bowl is at the top of my list when it comes to my family’s favorite dinner in a bowl.  Not only is this Chicken Fajita Bowl absolutely delicious, it is packed with protein and tons of nutritious vegetables.  The best thing about this dish is that we can all make our fajita bowls in our own way whether it’s cheesy, spicy, or loaded with guacamole. I started by slicing chicken breast thinly to increase the surface area, but also to reduce cooking time.  I also made a spice blend that uses common spices to create maximum fajita flavor for your chicken.  When I think of a good fajita, it always comes with lots of colorful sauteed veggies.  I like to use some colorful peppers and onions for this dish, and this is also a good use for my Red Cabbage Slaw if you like to add some crunch and brighter flavors to your bowl.  For the base of your bowl, I definitely recommend serving this over my Cilantro Lime Rice.  Nothing is better to me than combining all of these ingredients together for a festival of flavors.   Speaking of festivals, did you know about that time I won a pickle eating contest at a local festival?  Truth be told, I love anything pickled, so when my family and I were perusing our town's festival one fall day, my kids spotted a sign for a pickle eating contest and goaded me into entering.  At first I was very hesitant, but after some light persuasion I gave in.  I had never been in an eating competition before and I didn’t exactly know what to expect, but not long after I sat down, a plate with a cascading mountain of pickles was placed before me.  Luckily I hadn’t eaten lunch yet and was pretty hungry so I set to tackling this insurmountable pile of pickles set before me.  In hindsight, the whole ordeal felt like a fever dream, but somehow I had won the contest with a lead of 2 ½ pickles.  My family hooted and hollered as I received a pickle trophy and a free t-shirt as my prize.  Later that night, I really needed something more nutritious than a heap of pickles for dinner, so I rounded up some chicken and vegetables and made a delicious and nourishing meal of Chicken Fajita Bowls.

Instructions

  1. Start your Cilantro Lime Rice if using (highly recommended).

    Prepare your veggies.  Thinly slice your peppers and onions. Set aside.

    I always recommend preparing your veggies before your meat in recipes like this to avoid any cross contamination. If you are using more veggies along with the peppers, now is a good time to prep those as well.
  1. Once your veggies are prepped, thinly slice your chicken and combine your seasoning mix.  Combine your chicken and seasoning mixture well and set aside. 

  1. Preheat 2 teaspoons of olive oil in your saute pan and cook your peppers and onions until tender crisp.  Set aside

  1. In the same pan that you cooked your peppers, add another 2 teaspoons of olive oil to your pan and add your chicken.  Saute until fully cooked working in batches if necessary.  

    Why have more dirty dishes to wash? Use the same pan that you cooked your peppers, they heat up nicely in the microwave if they need to be reheated before serving.
  1. If making cilantro lime rice, make sure that is assembled at this point.  Add your rice, chicken, peppers, and any additional toppings you like to your bowl and ejnoy!
