I like to serve my Foolproof Chicken Tacos with traditional ingredients or even step it up with my Red Cabbage Slaw and some smoky chipotle mayo. You don’t need to limit these to a tortilla, these go great over my Cilantro Lime Rice for a satisfying burrito bowl. I prefer to grill my Foolproof Chicken Tacos, but these also work great sautéing them stovetop. My Foolproof Chicken Tacos make great leftovers too (if you have any left)!

Introducing your new family favorite! My Foolproof Chicken Tacos are sure to be a hit at your next taco night! I like to top these with my Red Cabbage Slaw for an extra burst of flavor and crunch, but any way you top them, you'll be in for a treat! I've taken common spices and combined them into a flavorful rub that turns out perfect every time. These are great grilled or even sauteed stove top for those days that aren't so great for grilling. And why limit these to just tacos?!?! My family loves these Foolproof Chicken Tacos (just the meat of course) served over my Cilantro Lime Rice for a satisfying and homemade burrito bowl. Chicken thighs are truly what makes this recipe foolproof because they are naturally tender and juicy, but chicken breasts work great as well if you prefer a leaner protein option. These really could not be any simpler for the result you get! Pair these with my guacamole and you’ll feel you’re eating at your favorite Mexican restaurant. Speaking of all these tacos, I was having a Superbowl party last year and decided to make a huge batch of my Foolproof Chicken Tacos for all of our guests. I went through my usual routine of seasoning the chicken, and preparing all my ingredients. Once I was done, I laid out all my taco ingredients along with the tortillas, and there it was, a tortilla with the face of Elvis on it. It was as clear as day that this tortilla was like no other, every browned detail on this particular tortilla was in perfect harmony to resemble The King himself. I was beyond thrilled, so I ran to get my husband to show him what I found. Unfortunately, when I returned, one of my kids had half the tortilla stuffed into their mouth and was chomping away at my one of a kind Elvis tortilla. I guess Elvis had left the building that Superbowl Sunday, but what was really the highlight of the day was my Foolproof Chicken Tacos. Enjoy!!Â

Combine your seasonings together and sprinkle evenly over both sides of your chicken. Set aside for 10-15 minutes to allow the meat to absorb the flavor, this can be done up to a day ahead of time and refrigerated until ready to cook. If grilling, add oil to your chicken first an then add your spices.
While your chicken is marinating, prepare your remaining taco ingredients. Â

Cook your chicken!
For Grilling: Preheat your grill to medium high heat, and clean and oil your grates. Add your chicken to the grill and cook approximately 12-14 minutes, flipping every 5-6 minutes, or until your internal temperature reaches 165 degrees.  -
Once your chicken thighs have cooked and rested a few minutes, slice them into strips or cut them into chunks, depending on your preference.Â

I like to eat these with some chipotle mayo and my homemade red cabbage slaw, but they are also delicious served on top of my cilantro lime rice with your choice of toppings. Â
