This Red Cabbage Slaw can also stand alone as a vegetable side dish or you can pile it on to any sandwich. Move over cheese and sour cream! Here comes your new favorite topping for tacos. My Red Cabbage Slaw will bring a bright and delicious crunch to your tacos and give you a nice serving of veggies while you're at it. The perfect taco to me is one that brings an element of freshness to balance all the bold flavors of your taco filling. I added plenty of crunchy and colorful vegetables, but also added a healthy amount of cilantro to bring lots of herbs to this slaw.  My Red Cabbage Slaw is a great multi tasker too, it stands alone as a vegetable side, or pile it on top of a plate of hummus, the sky is the limit to how you can serve my Red Cabbage Slaw. Â

Instructions
Prepare your vegetables

Prepare all of your vegetables according to the instructions and place everything in a bowl, set aside while you make your dressing.
Make Dressing

Combine all of your dressing ingredients, mix well and pour over your slaw. Mix well and set aside in your refrigerator 10-15 minutes and enjoy!
